I love this chicken! It has so much flavor and so simple to make. There are so many spices and chiles in our Spicefire rub that add another dimension of flavor. Cook it in the over or on the grill for a healthy and enjoyable meal.
Spicemode Spicefire Rub
2 1/2 lbs chicken thigh, bone-in, skinless
1/2 Cup Yogurt
1. Remove skin from chicken. Using a sharp knife make three deep slashes diagonally across the grain of each thigh. Add 1/2 cup of yogurt and a generous amount of Spicefire Rub until the chicken is nicely coated. Mix to combine then let marinate for 30 minutes to overnight.
2. Add to an oiled baking sheet and place in center rack of preheated 420 degree oven. Roast turning pan half way, until chicken is charred and easily pulls away from the bone. Serve garnished with chopped cilantro, sliced red onion and limes.
Tips : The slashed in the chicken will help it cook quickly and evenly. For even more flavor add an additional sprinkle of rub after placing the pieces in the roasting pan. You can also cook this on the grill.
