Sweet Potato Hash w/ Vindaloo Fire
Charred sweet potatoes, caramelized onions with the smoky and spicy Vindaloo Fire seasoning – combine to make an interesting addition to your next brunch menu.
2 tbsp Vindaloo Fire Seasoning
2 Medium Sweet Potatoes
1 Small Onion, Diced
1 tsp Sweet Paprika
1 tsp Roasted Cumin
1. Peel and cut the potatoes into small cubes. Add to a hot skillet with oil and cook in a single layer until the outside begins to soften – about 10 minutes.
2. Next add Vindaloo Fire seasoning and roasted cumin. Stir to combine and contine to cook until the potatoes begin to darken. Add the chopped onion and press the potatoes against the pan keep cooking until charred in spots.
3. Once cooked through, soft and delicious season with salt and pepper, sliced jalapeños and scallions.
Tips : Microwave or boil the potatoes for five minutes to cook halfway then continue with the recipes. This will speed up cooking time. Take your time and adjust the heat so you get a nice char on the potatoes – this is what takes a hash from good to excellent.
